4 Chicken breasts
1 tsp oregano (dried)
2 Tbsps Pastry flour
3 Tbsps olive oil
1 onion
2 garlic cloves
1 Tbsp Caper
150 grams Dried Fruit (apricots and plums)
50 grams black Olives
4 fresh bay leaves
250 milliliters white wine
salt
freshly ground peppers

Preparation steps

Peel and finely chop garlic and onion.

Rinse chicken breasts and pat dry. Season chicken with salt, pepper and oregano and coat with flour. Tap off excess flour. In a pan, fry chicken in 2 tablespoons hot oil on all sides. Remove chicken and add remaining oil. Sauté onion and garlic until translucent. Add dried fruit, wine, olives, capers and bay leaves. Place chicken breasts on top. Bake in preheated oven at 160°C (approximately 325°F), about 25-30 minutes. During baking time, occasionally turn chicken and add extra wine, if necessary. Season with salt and pepper and serve.

Serve chicken with white bread if desired.
