- For the salad
- 4 Chicken breasts (skin on)
- 2 Tbsps olive oil
- salt
- peppers
- ½ cup raisins
- ¾ cup whole almonds (skinned)
- 2 heads red Chicory (leaves separated)

Preparation steps
1.
Rub the chicken with oil and seasoning and cook on a griddle pan over a medium heat, skin side down, until golden and crisp. Turn over and cook on the other side for 4-5 minutes or until cooked through. Set aside to rest.

Place the almonds, raisins and chicory in a serving bowl.
3.
Whisk together the honey and mustard, then whisk in the oil to make an emulsion. Season.
4.
Slice the chicken and sit on top of the salad. Spoon over the dressing and serve.
