- 1 chicken (ready to cook, 1,2 kg)
- 60 grams smoked Pancetta (sliced)
- 8 shallots
- 2 sticks Celery
- 2 carrots
- 200 milliliters chicken stock
- 200 milliliters French Red wine (such as Burgundy)
- 1 garlic clove
- 2 bay leaves
- 2 thyme
- 4 Juniper berries
- salt
- freshly ground peppers
- 150 grams button Mushroom
- 2 Tbsps butter
Preparation steps

Rinse chicken, pat dry and cut into 10 parts. Cut pancetta into cubes and brown in a hot saucepan. Remove from pan. Brown chicken pieces in the same saucepan on high heat and remove from pan. Peel shallots, celery and carrots. Cut celery and carrots into small cubes. Brown vegetables in a pan and add broth and red wine. Add peeled garlic, bay leaves, thyme, juniper berries and pancetta. Season with salt and pepper. Return chicken to pan and simmer, covered, for about 30 minutes.

Clean mushrooms. Heat butter in a pan and saute mushrooms. Add to chicken and simmer for another 10 minutes. Season with salt and pepper to taste and serve.
