Preparation steps

1.

Rinse the beet and cook in boiling salted water for 30-40 minutes (depending on the size), until tender. Peel the beet, then finely grate. Peel and finely dice the onion. Crush the caraway seeds in a mortar.

Mix the beet with the onion, caraway seed, balsamic, and olive oil. Season to taste with salt and pepper. Mix the horseradish into the beet mixture and stir to combine. Transfer to a small bowl, garnish with the chives, and serve.
