Preparation steps

Soak bread in lukewarm water. Rinse chile pepper, cut in half lengthwise, remove seeds and finely chop. Peel shallot and garlic, chop finely and cook in a hot pan with a little oil until translucent. Add parsley and chile pepper, mix and remove from heat.

Add mixture to the ground beef and mix with the egg and well-squeezed bread. Season with salt and cayenne pepper. From the mixture shape small oblong balls and thread on on wooden skewers. Brush with the remaining oil and cook on a hot grill, turning frequently, until brown on all sides.

Rinse tomatoes, remove the stems and cut into slices. Cut the baguette lengthwise, cut into 8-10 cm (approximately 4-inch) long pieces and serve each with a skewer. Garnish with a slice of tomato and parsley, if desired.
