Preparation steps

Preheat the oven to broil. Trim the peppers, rinse, remove seeds and ribs and cut into wide strips. Place with the skin side up on a baking sheet and broil in a preheated oven until the pepper skins turn black. Cover with a damp tea towel and allow to cool.

Meanwhile rinse the tomatoes, remove the stalk approaches and plunge the fruits about 30 seconds in boiling water. Rinse with cold water and remove the tomato skins. Halve, seed and chop the fruit.
