- 2 Fennel bulb (thinly sliced)
- 2 sticks Celery (cut on the bias)
- 2 onions (chopped)
- 2 carrots (chopped)
- 2 parsley (or parsnip, chopped)
- 35 ozs Beef (prepared by the butcher)
- salt
- freshly ground peppers
- 4 Tbsps sunflower oil
- ⅓ cup Bacon (diced)
- mixed Berry (crushed)
- black peppercorns (crushed)
- 2 bay leaves
- 2 cups Beef broth

Preparation steps
1.
Season and fry the beef in hot oil on all sides in a roasting pot, then remove and set aside. Fry the bacon in the remaining oil, add the onion and the vegetables and saute until browned.

Add the crushed allspice berries and the peppercorns as well as the bay leaves. Pour in some of the beef broth. Put the beef on top of the vegetables, cover and braise for about 2 - 2 1/2 hours over a low heat.

Keep adding some of the beef broth and turning the beef every so often. Season to taste with salt and pepper and serve.
