- 32 ozs stewing Beef (cut into 3cm| 1 1/2"pieces)
- 2 onions (coarsely chopped)
- 1 clove garlic cloves crushed (optional)
- 4 carrots (coarsely chopped)
- 1 Tbsp flour
- 1 tsp ground allspice
- salt
- peppers
- 2 cups Beef stock
- ⅜ cup dark beer
- 2 bay leaves
- 1 Tbsp black Molasses (or brown sugar)

Preparation steps
1.
Heat the oven to 160°C (140° fan) 325°F gas 3.

Heat the oil in a flameproof casserole or large pan and add the meat in batches. Fry quickly until brown on all sides. Remove the meat and set aside.
3.
Add the chopped onions, garlic and carrots to the fat left in the casserole and cook for a few minutes until lightly browned.
4.
Add the flour, allspice, salt and pepper and cook for 1 minute, stirring, before adding the beer, beef stock, bay leaves and molasses to the pan.
5.
Bring to a boil, stirring constantly. Add the meat and cover the casserole. If using a pan, put into a deep baking dish.
6.
Transfer to the oven and cook for 2-3 hours, until the meat is very tender but not stringy.
