- 21 ozs Flank Steak (cut into 4 and lightly pounded)
- 1 Tbsp hot Mustard
- 8 small gherkins (sliced into sticks)
- 4 slices smoked Bacon
- 1 Tbsp all-purpose flour
- 2 Tbsps vegetable oil
- 1 Tbsp paprika
- 1 Tbsp Tomato paste
- ⅞ cup dry Red wine
- 1 ⅔ cups Beef broth
- 2 carrots (finely chopped)
- 3 shallots (sliced)
- 2 Tbsps Caper
- salt
- freshly ground peppers

Preparation steps

Preheat the oven to 160°C (140° fan) 325F, gas 3.

Spread each piece of beef with mustard, lay over 1 slice bacon and a few gherkins, roll each one tightly and tie with kitchen string.

Dust the roulades with flour. Heat the oil in an ovenproof casserole dish and and brown the roulades on all sides.
4.
Stir in the paprika and tomato paste, pour on the wine and broth and bring to a boil, stirring gently.
5.
Add the carrots and shallots to the meat and cook in the oven for 60-70 minutes, turning the roulades frequently.
6.
Add the capers and season to taste with salt and pepper. Remove the string before serving.
