500 grams Beef (Shoulder)
2 Tbsps Tomato paste
3 Tbsps Worcestershire sauce
4 Tbsps vegetable oil
1 stalk Leeks
300 grams carrots
1 pc Celery root
2 Beefsteak tomato
2 bay leaves
3 cloves
Juniper berries (about 3)
allspice (about 3)
salt
freshly ground peppers
500 milliliters Beef broth
250 grams Spiral pasta
parsley (for garnish)

Preparation steps

1.

Cut the meat into cubes. Mix tomato paste, Worcestershire sauce and oil in a large bowl. Add the meat and toss to coat well. Cover and refrigerate for about 1 hour.

Cook the pasta in boiling salted water until al dente. Drain, rinsed and drain.

Rinse leek and cut the white and light green parts into strips. Peel carrots and celeriac and cut into cubes. Rinse and coarsely chop tomatoes.

Place the meat with the marinade into a saucepan. Add the broth and bring to a boil. Reduce the heat to low and simmer for about 45 minutes. Place bay leaves, cloves, juniper berries and allspice in a cheesecloth sack and tie closed with kitchen twine. Add to the pan with the prepared vegetables and cook another 20 minutes. Season with salt and pepper. Stir in the cooked noodles. Serve garnished with parsley.
