- 1 whole beef tenderloin (approx 1.75 kg | 3 3/4 lbs)
- 6 Tbsps olive oil
- 4 rashers Bacon (cut in pieces)
- 1 Leek (trimmed and finely chopped)
- 2 carrots (peeled and finely chopped)
- 11 ozs button Mushrooms
- ⅜ cup Marsala wine

1 Pot, 1 Casserole dish, 1 Bowl, 1 Small bowl, 1 Cutting board, 1 Large knife, 1 Small knife, 1 Tablespoon, 1 Teaspoon, 1 Sieve, 1 Brush
Preparation steps

Heat the oven to 220ºC (200º fan) 425ºF, gas 7.
2.
Rub the meat with a little oil and season with salt and pepper.
3.
Heat the remaining oil in a roasting pan on the hob and fry the bacon for 3 minutes. Remove from the pan and set aside.
4.
Sear the meat on all sides in the pan and set aside.
5.
Put the chopped leek and carrot into the pan, stir until the leek starts to soften then add the mushrooms and stir in the marsala wine.
6.
Return the meat and bacon to the pan, baste in the pan juices, cover with kitchen foil and roast in the oven for 25 minutes (rare), 35 minutes (medium) or 45 minutes (well done).
7.
Let the meat rest for at least 15 minutes before serving.
