Preparation steps

Trim and wash the leeks and cut each leek in half crosswise. Blanch the leeks in boiling, salted water for 1-2 minutes, then refresh in cold water and drain very well. Dry the leeks, brush with oil and place on a barbecue. Grill on all sides until lightly coloured. Melt the butter in a small frying pan and toast the breadcrumbs and sesame seeds. Season with salt, nutmeg, coriander and cumin and sprinkle over the leeks before serving.
