- For the soup
- 100 grams smoked Pancetta
- 1 onion
- 1 Tbsp vegetable oil
- 1 l Beef broth
- 1 bay leaf
- 200 grams Pearl barley
- 2 Tbsps finely chopped parsley
- 2 Tbsps scallions
- salt
- peppers

Preparation steps
1.
For the soup, cut the bacon into thin strips. Peel the onion and chop finely. Sauté bacon and onion in a pot in hot oil until light brown. Pour in the broth, add the bay leaf and bring to a boil. Rinse the barley in a colander, add to the soup, cover and simmer about 1 hour.

Finally, remove the bay leaf, add the herbs to the soup and season with salt and pepper.
3.
Distribute soup in bowls and serve sprinkled with pine nuts and Parmesan.
