750 milliliters Vegetable broth
150 grams Dandelion greens
150 grams Smoked salmon
4 scallions
100 grams Yogurt (0.1% fat)
Wasabi paste (to taste)
1 Tbsp lemon juice
1 pinch sugar

Preparation steps

Combine barley with broth in a pot. Cover and let soak overnight.

The next day, bring barley to a boil and simmer about 45 minutes over low heat. If necessary, drain off remaining liquid.

Rinse, trim and spin dandelion greens dry, then coarsely chop. Cut salmon into thin strips. Rinse, trim and cut scallions crosswise into rings.

To make dressing: Whisk yogurt with wasabi to taste (depending on how spicy you like it), along with lemon juice and sugar. Season with a little salt and pepper. Toss prepared ingredients with dressing and divide salad among bowls.
