2 kilograms Pork ribs
For the bbq sauce
2 Tbsps Tomato paste
1 Tbsp grated Horseradish
2 Tbsps honey
1 Tbsp grated ginger
2 centiliters sherry
2 Tbsps balsamic vinegar
2 Tbsps vegetable oil ((plus more for the grill grates)
salt
cayenne pepper
For the grilled peppers
Bell pepper (2 red, yellow and green)
1 cup olive oil
2 sprigs rosemary (coarsely chopped needles)
salt
freshly ground peppers

Preparation steps

For the bbq sauce: In a bowl, mix together all the barbecue sauce ingredients. Heat the grill to medium and oil the grates.

Rinse the spare ribs, pat dry, place in a baking dish and cover with the barbecue sauce, turning to coat. Cover and refrigerate 6 hours. Lift the pork from the marinade, reserving the marinade, place on the grill and cook, turning the ribs every so often and brushing with the marinade for the first 15 minutes of cooking, until cooked through, about 25 minutes.

For the grilled peppers: Rinse the peppers, halve lengthwise, remove the seeds and white ribs and cut into bite size pieces.

Place the peppers on a sheet of foil, brush with oil, sprinkle with rosemary, season with salt and pepper.and grill alongside the ribs during the last 10 minutes of cooking.

4.

Serve the ribs with the peppers.
