1 Roasted Chicken (cut of approximately 1.5 kg in 8 parts)
ground paprika
salt
freshly ground peppers
cold pressed olive oil
Barbecue sauce
400 grams Couscous
5 Tomatoes
3 Tbsps scallions
½ bunch parsley

Preparation steps

Preheat the oven to 200°C (approximately 400°F). Grease a baking sheet.

 

Rinse the chicken, pat dry, sprinkle with a little oil and rub with salt, pepper and paprika. Set aside 1 tablespoon of barbecue sauce.

Place the chicken on the baking sheet and roast 30-40 minutes, brushing frequently with barbecue sauce.

Cook the couscous according to package directions and let cool. Rinse and halve the tomatoes, remove seeds and dice. Coarsely chop parsley. Mix the couscous with 3 tablespoons olive oil, parsley and chives. Season with lemon juice, salt and pepper.

Before serving, cut the chicken into smaller pieces with a pair of poultry shears. Toss the cooked chicken with the reserved tablespoon of barbecue sauce. Divide the couscous salad among 4 plates. Top with the chicken and serve immediately.
