- 1 onion
- 2 carrots
- 1 Parsnip
- 1 stalk Leeks
- 600 grams Sweet potato
- soft butter (for baking dish)
- 2 sprigs rosemary
- 2 sprigs fresh thyme
- Sea salt
- freshly ground peppers
- 750 milliliters Beef broth

Preparation steps

Preheat the oven to 200 ° C top and bottom heat.

Rinse meat, pat dry and cut into about 3 cm (approximately 1 1/4 inch) cubes. Peel onion and chop finely. Peel carrots and parsnip and cut into thick slices. Rinse and dry leek, cut into rings. Peel sweet potatoes and slice into slices.

Layers all ingredients into a buttered baking dish, starting with potatoes. Season each layer with spices, salt and pepper. Finish layering with potatoes again and season with salt and pepper. Add broth, cover and bake in preheated oven at 200°C (approximately 400°F) for about 1.5 hours. Approximately 20-30 minutes before the end of cooking, remove lid and let potatoes brown. Serve hot.
