Preparation steps

Preheat the oven to 180°C (approximately 350°F) Rinse the chicken drumsticks and pat dry. Mix together the honey, vinegar, oil and soy sauce and season with salt and pepper. Place the drumsticks in a roasting pan large enough to hold them in a single layer. Brush the chicken with the honey mixture and bake until golden brown and cooked through, about 30 minutes, turning pieces over midway and brushing with the honey mixture. Meanwhile, trim, rinse and slice the leek on the diagonal. Place the leek in a steamer set over a pan of simmering water and cook until al dente.

Blanch the chives in a pot of boiling salted water until wilted and pliable, about 2 seconds. Drain, rinse under cold water and drain well. If desired, tie the chives around the bony ends of the drumsticks. Serve the chicken on the bed of leeks, sprinkled with lemon juice.
