Ingredients

For Honey Glazed Chicken
½ cup honey
2 tablespoons fresh lemon juice
2 tablespoons soy sauce
8 Chicken drumstick
salt (to taste)
freshly ground Black pepper (to taste)
For Mashed Potatoes with Spring Onions
6 cups russet potato (peeled and quartered)
salt (to taste)
¾ cup milk
4 scallions (cleaned; trimmed and chopped)
4 tablespoons butter (melted)

Preparation steps

For Honey Glazed Chicken:

Preheat oven to 325º F.

In a small bowl, combine honey, lemon juice, and soy sauce. Set aside.

Rinse chicken under cold running water and pat dry with paper towels. Season the chicken with salt and pepper and brush with glaze. Arrange chicken on a baking sheet and cover with aluminum foil. Slow bake for about 35 minutes. Turn chicken over and brush with glaze, cover with foil and continue cooking for an additional 30 to 35 minutes. Remove foil, increase temperature to 400º F and bake until the skin is brown and crispy, about 10 minutes.

For Mashed Potatoes with Spring Onions:

Cook potatoes in a large pot of salted boiling water until fork tender. Drain well and return to pot.

Mash potatoes in the pot and set aside.

In a medium saucepan, bring milk to a simmer. Add chopped onions and simmer for about 5 minutes.

Add milk mixture and half of the melted butter to the mashed potatoes; mix well and season with salt and pepper. Fold remaining melted butter into the mashed potatoes.
