- 600 grams Sea bass fillet
- 400 grams small potatoes
- 4 shallots
- 10 cloves fresh garlic cloves
- 100 grams Smoked ham (sliced)
- 150 milliliters dry white wine
- 100 grams black Olives (pitted)
- 3 Tbsps olive oil
- Sea salt
- freshly ground peppers

Preparation steps

Preheat the oven to 180°C (approximately 350°F).

Rinse the sea bass, pat dry and cut into 4-8 pieces of equal size. Peel potatoes and shallots and cut both into wedges. Press the garlic. Cut the ham into thin strips.

Arrange the potatoes in a baking dish with the shallots, garlic, olives, ham and a little white wine. Season with salt and pepper, mix well and bake for about 20 minutes at 180°C (approximately 350°F) in a preheated oven. Turn halfway through and pour in more wine or water as needed. Then place the fish fillets on top. Season with salt and pepper and cook for another 6-8 minutes until fish is done.
