1 kilogram onions
40 grams butter
1 Tbsp Pastry flour
l white wine
1 ⅕ liters Beef broth
1 tsp freshly chopped thyme
1 bay leaf
1 garlic clove
salt
cayenne pepper
Nutmeg (ground)
4 slices Baguette
120 grams freshly grated Gruyere

Preparation steps

Preheat the oven broiler.

Peel onions and cut into strips. Melt butter in a saucepan and slowly saute onions, stirring occasionally, for about 15 minutes until golden brown. Sprinkle onions with flour, saute briefly and deglaze the saucepan with white wine while stirring. Add broth, thyme and bay leaf. Peel garlic and press into the saucepan. Bring to a boil and seasonwith salt, nutmeg and cayenne pepper. Remove bay leaf.

Toast baguette slices under the preheated oven broiler, watching carefully, until golden brown on both sides.

Pour soup into 4 ovenproof bowls and top with baguette slices. Sprinkle each baguette with cheese and cook under oven broiler for about 4-5 minutes until golden brown. Serve immediately.
