800 grams lamb
3 Tbsps vegetable oil
100 grams onions
3 scallions
2 chili peppers (red)
1 tsp salt
1 tsp peppers
1 tsp cayenne pepper
50 milliliters water
1 Tbsp Tomato paste
2 Tbsps Cognac

Preparation steps

1.

Peel onions and cut into small cubes. Rinse and dry scallions, cut into rings.

Cut meat into medium sized cubes,  rinse and pat dry.

3.

Heat oil in a saucepan and brown lamb for about 5-6 minutes. Add onions and some scallions and saute for 2-3 minutes, stirring.

Add tomato paste, season with salt, pepper, cayenne pepper and mix well. Add water and bring to a boil, remove from heat. 

5.

Rinse chile peppers, remove seeds and ribs and cut into rings. Add with remaining scallions to meat. 

6.

Spread 4 sheets of parchment paper and layer kebab on them. Drizzle with Cognac and fold paper, sealing tightly. Bake in preheated oven at 160°C (approximately 325°F) for about 20 minutes. Open paper envelopes and arrange meat on plates. Serve with rice or bread.
