- 4 Cod (about 150 grams or 5 ounces)
- 1 tsp lemon juice
- 4 sun-dried Tomatoes (in oil)
- 1 Tbsp Cranberry
- 250 grams Goat cheese
- 6 thyme
- salt
- peppers
- 3 onions
- 40 grams butter
- Fat (for greasing)

Preparation steps
1.
Preheat oven to 250°C (approximately 475°F). Grease a baking sheet.

Rinse fillets, pat dry and sprinkle with lemon juice. Dice sun-dried tomatoes finely. Rinse cranberries. Cut goat cheese into cubes. Rinse thyme, shake dry and pluck off leaves, reserving a few sprigs for garnish. Season fillets with salt and pepper. Mix goat cheese with cranberries, tomatoes and thyme. Spread on fillets. Place fillets on baking sheet and bake for 10-12 minutes.

Meanwhile, peel onions and cut into rings. Heat butter in a saucepan and saute onions until soft.

Serve fillets with onions and browned butter and garnished with thyme.
