- 1 shallot
- 1 garlic clove
- 3 red Bell pepper
- 6 scallions
- 600 grams Chicken breasts
- 4 Tbsps olive oil
- 500 grams Tomatoes (puree)
- salt
- peppers
- 1 Tbsp dried herbes de Provence
- 250 grams Mozzarella
- 100 grams grated Mountain cheese
Preparation steps
1.
Preheat the oven to 200°C (approximately 375°F).

Peel the shallot and garlic and chop finely. Rinse and dice peppers. Rinse, clean and cut scallions into small slices. Rinse the meat and cut into large pieces.
3.
Heat oil in a pan and brown the chicken along with the shallot and garlic on all sides 1-2 minutes. Add the green onions and peppers and cook about 3 minutes. Season with salt and pepper.
4.
Add tomato puree and cook for about 5 minutes. Season with salt, pepper and herbs. Transfer to a baking dish. Cut the mozzarella into slices and top the chicken.
5.
Bake in the oven for about 5 minutes until cheese melts and serve hot.
