Ingredients
- For Rollmopshappen
- 9 Rolls (jarred)
- 9 Cornichons (jarred)
- 6 Cherry tomatoes
- 1 white onion
- For the cracker
- 250 grams Harzer Cheese
- 12 Crackers
- ½ tsp paprika
- ½ tsp Caraway
- For the herring salad
- 4 Pickled herring
- 1 cooked, red Beet
- 1 tart Apple (such as Granny Smith)
- 100 grams gherkins
- 30 grams chopped Walnut
- 2 Tbsps finely chopped Dill
- 100 grams Mayonnaise
- ⅛ l sour Whipped cream
- 1 tsp Mustard
- salt
- freshly ground peppers
- ½ tsp sugar
- 2 Tbsps Vinegar
- For the potato salad
- 150 milliliters Vegetable broth
- 2 Tbsps White vinegar
- 1 onion
- 2 Tbsps sunflower oil
- 1 Tbsp scallions
- 4 Lettuce
- For the Bloody Mary
- peppers
- Celery salt
- 8 splashes Tabasco sauce
- 20 splashes Worcestershire sauce
- 4 centiliters lemon juice
- 120 milliliters Vodka
- 500 milliliters Tomato juice
- 1 bunch Celery
Preparation steps
For Rollmopshappen: Drain the rolled herring, unroll and place on a plate. Top with a cornichon and roll up. Peel the onion and cut into eighths. Rinse the tomatoes, drain and stuck a tomato with an onion wedge on a toothpick. For the cracker: cut the Harz cheese into 12 pieces for the crackers. Place a piece on a cracker and sprinkle with paprika and caraway.
For the potato salad: Rinse the potatoes and cook in a pot of boiling salted water until knife-tender, 20-25 minutes. For the herring salad: Meanwhile, cut the pickled herring, the beet and apple into cubes. Drain the pickles and cut into small cubes. Transfer the herring, beet, apple and pickles to a bowl and stir in the walnuts and the dill. Add the mayonnaise, sour cream, mustard, sugar and vinegar and season wtih salt and pepper. Refrigerate several hours for the flavors to come together. If necessary add a little of the pickle liquid. Serve in bowls and garnish with dill. Drain the potatoes, let cool and peel and cut into small pieces. Peel the onions and very finely chop. In a saucepan, heat the broth with vinegar and pour over the potatoes. Add the onions and oil, season with salt and pepper and refrigerate several hours. Adjust seasoning and sprinkle with chives and serve on lettuce leaves. For the Bloody Mary: Fill a pitcher with some ice cubes. Add the pepper, celery salt, Tabasco and Worcestershire sauce, lemon juice, vodka and tomato juice. Stir well with a long-handled spoon. Garnish with celery.
