Preparation steps

Rinse the asparagus, trim the ends and peel the lower third. Saute the asparagus in a pan in 1-2 tablespoons hot oil for about 6-8 minutes until crisp-tender. Season with salt, pepper, butter and lemon juice.

2.

Meanwhile, fry the eggs in the remaining oil and a separate pan and season with salt and pepper. Rinse the strawberries with the green stems, pat dry and cut in half. Place two fried eggs over 4-5 stalks asparagus onto plates and garnish with the strawberries.
