Preparation steps

Peel the white asparagus, cut off the woody ends and cut into 2 cm (approximately 1 inch) cubes. Rinse the green asparagus, cut off the woody ends and cut into 2 cm (approximately 1 inch) thick slices. Blanch the asparagus in plenty of boiling salted water for about 6-8 minutes. Lift out with a slotted spoon and drain.

Heat 2 tablespoons of butter in a large frying pan and fry the shrimp in it. Add the asparagus and cook briefly. Season with parsley, salt and pepper. Push the vegetables and the shrimp to the edge of the pan. Fry 6 eggs in the center of the pan. Season with salt and plenty of pepper. Serve immediately, with fresh white bread.
