24 ozs boneless, skinless Chicken breasts
1 Tbsp sesame oil
1 large onion (peeled and sliced)
1 cup sliced Mushrooms
2 carrots (peeled and julienne)
4 cloves garlic cloves (peeled and minced)
1 inch freshly grated ginger (peeled and grated)
6 cups low-sodium Chicken broth
½ cup low-sodium soy sauce
4 Tbsps fresh Lime juice
1 stick Lemongrass
2 cups asian noodles
2 cups Bean sprout
½ bunch scallions (cleaned and thinly sliced)
1 Cucumber (peeled and sliced)
1 handful fresh cilantro (to garnish)

Preparation steps

Rinse chicken under cold running water and pat dry with paper towels. Cut into bite-size pieces.

Heat oil in a large pot set over medium heat. Add chicken and cook until brown on both sides and cooked through, about 8 minutes. Remove chicken from pan and keep warm.

Using the same large pot, saute onions and mushrooms until tender, about 6 minutes. Add carrots, garlic, and ginger and saute until fragrant, about 1 minute. Add the chicken broth, soy sauce, lime juice, lemon grass and cooked chicken. Bring to a boil. Reduce heat and simmer, uncovered, for 20 minutes.

Add Asian noodles, stirring to incorporate, cook until just tender. Stir in bean sprouts, scallions and sliced cucumbers.

Ladle into individual bowls and garnish with fresh cilantro. Serve.
