100 grams Snow peas
100 grams green Beans
1 bunch scallions
1 big piece ginger
4 carrots
6 Tbsps Sake (Japanese rice wine)
3 Tbsps sugar
1 Tbsp Japanese soy sauce
1 Tbsp Potato flour
1 Tbsp Sesame seeds
1 Tbsp vegetable oil
For the soba noodles (optionally, use dried soba noodles)
300 grams Buckwheat flour
150 grams Pastry flour
½ tsp salt
300 milliliters water
1 Pasta machine

Preparation steps

Mix both types of flour in a bowl. Stir in the water with a fork. Once the water is added, knead on a floured surface to a smooth dough. Divide the dough into 4 equal pieces and roll each piece through pasta machine using a 2 mm (approximately 1/16-1/8-inch) thick plate. Sprinkle with flour between rolling passes. Sprinkle dough sheets with buckwheat flour and let dry slightly. Cut dough sheets in half to easily fit pasta sheet passes through the pasta machine. Cut long thin noodles with the cutting plate. Place the cut noodles on a clean kitchen towel and proceed with the remaining dough sheets. Cook in plenty of salted water. Then drain.

Rinse snow peas and blanch for 3 minutes in boiling salted water. Rinse green beans and blanch for 5 minutes in boiling salted water. Peel carrots and quarter lengthwise. Trim scallions, rinse and remove the outer layers. Cut into pieces and also cut some of the green part. Rinse ginger and cut into slices. Cut pork into bite-sized pieces. In a large skillet heat oil and fry the meat on all sides over medium heat. Add carrots, ginger, beans and snow peas and fry vigorously. Reduce heat, cover and cook for 5 minutes. In a pot, mix sake, sugar and soy sauce. Bring to a boil, add to the skillet and bring to a boil again. Remove from the heat. Combine potato flour with 2 tablespoons of warm water. Stir, add to the pot and stir until thickened. Fill serving dishes with noodles, add pork and vegetables and sprinkle with sesame seeds. Serve garnished with raw scallions.
