2 tablespoons Nut oil
2 cloves garlic (finely sliced)
½ inch fresh ginger (finely sliced)
1 red chile pepper (deseeded and finely chopped)
2 stalks Lemongrass (inner stalks only, finely chopped)
2 cups pork fillets (cubed)
2 tablespoons sugar
1 tablespoon soy sauce

Preparation steps

1.
Cook the noodles according to packet instructions. Drain well.
2.
Heat the oil in a wok and sauté the garlic, ginger and chilli with the lemongrass for a few minutes until golden.
3.
Add the pork and colour over a high heat, then add the sugar and soy and allow to caramelize.
4.
Add the noodles and toss well to heat through.
