- 400 grams Wheat grain
- 400 milliliters Vegetable broth
- 1 bunch scallions
- 2 bunches Arugula
- 2 Tbsps thyme
- 4 Tbsps olive oil
- 1 Tbsp lemon juice
- 2 Tbsps White vinegar
- salt
- peppers (from the mill)

Preparation steps

Let the wheat grains simmer in the vegetable broth for about 25 minutes, but do not allow to boil. Drain any liquid that was not absorbed, remove from heat and let it sit.

Rinse the scallions and cut diagonally into thin rings.

Rinse arugula, remove tough stems and coarsely chop half of it. Mix both halves of the arugula with some of the cooled wheat grains and the thyme. Fold in the lemon juice, vinegar and oil. Season with salt and pepper and let sit for 10 minutes. Arrange any extra arugula leaves on plates, distribute the arugula-wheat grain salad on top and serve.
