- 1 ¼ cups raw shrimp
- 1 Tbsp Oil
- 1 ½ liters water
- 2 tsps ground Turmeric
- 1 tsp finely chopped, red chili peppers
- 2 Tbsps Fish sauce
- 2 Tbsps Lime juice
- 2 tsps brown sugar
- 1 handful Enoki mushrooms
- ½ Lime (sliced)

Preparation steps
1.
Peel and devein the shrimp, leaving the tails whole.

Heat the oil in a large pan, add the shrimp shells and heads and cook gently over a medium heat, stirring constantly, for 10 minutes, until the shells and heads are a deep orange colour.

Add 250 ml|1 cup water and simmer for about 5 minutes, until the liquid is slightly reduced.
4.
Add the remaining water and simmer for 20 minutes.

Strain the broth and return to the pan. Add the turmeric and chilli and bring to a boil. Add the shrimps to the pan and cook very gently for 5 minutes. Stir in the fish sauce, lime juice and sugar.
6.
Add the mushrooms and lime slices and check the seasoning. Serve immediately garnished with coriander.
