- 4 cups Chicken broth
- 2 ribs Celery (cleaned; trimmed and thinly sliced)
- 1 pc fresh ginger peeled and thinly sliced (about 1-inch)
- 2 stalks Lemongrass (crushed)
- 1 Star anise
- 16 ozs boneless, skinless Chicken breasts
- 2 fresh Limes (rinsed and cut into wedges)
- light soy sauce (to taste)
- salt (to taste)
- freshly ground Black pepper (to taste)
- 1 bunch Thai basil leaves only (for garnish)

Preparation steps
1.
In a large pan over medium-high heat, bring chicken broth to a boil.

Add the celery, ginger, lemon grass and star anise and simmer for 5 minutes.
3.
Rinse the chicken under cold running water and pat dry with paper towels. Using a sharp knife, cut chicken into thin strips. Add the chicken to the pot and cook very gently for 5 to 6 minutes, or until chicken is cooked thorough.
4.
Remove the lemon grass and add the lime wedges. Season to taste with soy sauce and salt.
5.
Ladle into bowls and serve garnished with Thai basil.
