- 1 Tbsp vegetable oil
- 1 Leek (cut into fine rings)
- 1 cup Baby Corn (sliced)
- 3 cups fish stock (or vegetable stock)
- 7 ozs Rice noodles
- 12 Scallop (shells removed)
- 1 Tbsp clarified butter
- ⅜ cup Coconut milk
- 1 Tbsp Lime juice
- 2 tsps light soy sauce
- 1 red chili pepper (chopped)
- ½ bunch cilantro (leaves removed)
Preparation steps

Heat the oil in a large pot and fry the leek and the corn cobs for around 2 min. Add the stock and boil for 3 min. Add the noodles and cook for 8-10 min.

Quickly fry the scallops in clarified butter on all sides.

Add the coconut milk, lime juice and soy sauce to the soup, transfer to bowls and add the scallops. Serve garnished with the chilli and the coriander.
