- 2 Tbsps sunflower oil
- 2 whole Mackerel (gutted and cleaned with heads removed)
- 2 shallots (finely chopped)
- 1 Tbsp red Curry paste
- fresh ginger (peeled and thinly sliced)
- 2 sticks Lemongrass (lightly crushed)
- 2 Vine Tomatoes (cored, seeded, and finely diced)
- 5 cups low-sodium vegetable stock
- 1 Lime (halved)
- 1 Tbsp Fish sauce (nam pla)
- 1 Tbsp gluten-free soy sauce
- cilantro (chopped)
Preparation steps

Heat the oil in a large saucepan or casserole dish set over a moderate heat until hot. Briefly fry the mackerel in the hot oil for 2 minutes.

Remove from the pan, reduce the heat slightly, and add the shallot, curry paste, ginger, and lemongrass. Fry for 2 minutes, and then stir in the tomatoes and stock.

Stir well, bring the broth to a simmer, and then position the mackerel in the saucepan. Cook steadily for 20 minutes.

Season the soup with freshly squeezed lime juice, fish sauce, and soy sauce to taste. Stir through the coriander.
5.
Ladle into bowls and serve.
