1 organic Orange (juiced and zested)
1 Cinnamon stick
1 Vanilla bean
500 grams jam sugar (2:1 ratio)

Preparation steps

Rinse the apricots, remove the stones and finely dice. Mix the apricots with the orange juice, orange zest, and cinnamon in a large saucepan. Slit the vanilla bean lengthwise, scrape out the seeds, and add both to the saucepan. Add the jam sugar, and mix well. Let marinate together for 1 hour.

Bring to a boil over high heat, stirring constantly. Cook for 4 minutes, until the mixture begins to thicken. Remove the cinnamon and vanilla bean. Fill the prepared jars to the brim with the jam. Seal tightly, and turn upside down to cool for 10 minutes. Turn right side up and cool completely.
