For the dough
200 grams Pastry flour
60 grams sugar
1 pinch salt
1 egg
125 grams butter
butter (for the pan)
Pastry flour (for working surface)
For filling
4 Apple (such as Boskop)
2 tablespoons lemon juice
250 grams Quark
1 egg yolk
50 grams powdered sugar
2 centiliters Calvados
1 teaspoon cornstarch
For sprinkling

Preparation steps

1.

For the pastry: combine flour with sugar and salt, place on a working surface in a mound. Make a well in the center, add egg to the well. Cut butter into small pieces and place around the well. With your hands, quickly knead smooth dough, shape into a ball and wrap into plastic wrap. Refrigerate for 30 minutes.

For the filling: rinse and dry apples, quarter and core and cut into slices. Drizzle with lemon juice.

Butter tart pan.

Roll out dough on a floured surface and line pan with it, making en edge all around. For the filling, combine quark with egg yolk, powdered sugar, Calvados and cornstarch. Spread filling on the pastry.

Arrange apple slices on the filling in a fan pattern. Bake in preheated oven at 180°C (approximately 350°F) for about 40 minutes or until golden brown. Remove from oven, sprinkle with powdered sugar and cinnamon. Serve warm or cold.
