Preparation steps

1.

For the dough: Mix the flour with the nuts and place in a bowl.  Make a well in the center and crumble the yeast into it. Stir in the milk and 1 of tablespoon sugar. Cover and let sit about 30 minutes in a warm place.

2.

Add the remaining sugar, salt, the remaining milk and the butter. Knead into a smooth dough until it detaches from the side of the bowl. If necessary, add more milk or flour. Cover and let sit for about 45 minutes.

3.

For the filling: Rinse the apples. Peel, core and cut into slices. Mix in a bowl with the lemon juice, raisins, sugar and cinnamon.

4.

Preheat the oven to 180°C (approximately 400°F). Grease the ramekins with butter.

5.

On a floured surface, roll the dough into a large rectangle about 5 mm thick (approximately 1/4 inch). Cut into 12 squares (each approx 12x12 cm (approximately 4 3/4 inches)) and cut in half diagonally. Place 3 triangles in each ramekin. Fill with apples and top with small pieces of butter. Bake in the oven until golden brown about 30 minutes. Serve with a dollop of yogurt, if desired.
