400 grams Puff pastry dough
5 Apple
1 (organic) lemon (zested and juiced)
250 grams Crème fraiche
4 tablespoons sugar
3 eggs
butter (for greasing)
4 tablespoons Apple jelly

Preparation steps

1.

Preheat the oven to 200°C (approximately 400°F). Grease tart tins with butter.

Cut puff pastry in half and roll each into the size of the pan.

Peel apples, quarter, remove core and slice. Drizzle with half the lemon juice and spread onto dough. Beat creme fraiche until smooth and stir in sugar, remaining lemon juice and zest. Separate eggs and beat yolks with cream. Beat egg whites until stiff and fold into yolks. Fold eggs into creme fraiche mixture. Pour mixture over apples and bake until golden brown, about 40 minutes. Remove drizzle with heated apple jelly. Let cool, slice and serve.
