Ingredients

For the dough
350 grams Pastry flour
1 tsp sugar
½ cube Yeast (21 grams)
2 Tbsps olive oil
1 tsp salt
For the filling
500 grams cooked, starchy potatoes (cooled)
250 grams Crème fraiche
4 eggs
salt
freshly ground peppers
Nutmeg
2 scallions
80 grams Bacon
1 Apple
80 grams grated Cheese (such as Emmentaler)

Preparation steps

For the dough, pour the flour into a bowl and form a well in the center.  Crumble the yeast and pour into the well. Add the sugar, 2-3 tablespoons of lukewarm water and a little flour from the edge. Cover and let sit for about 30 minutes. Add the oil, salt and 120 ml (approximately 1/2 cup) of lukewarm water. Knead into a smooth dough. Cover and let sit for another 30 minutes. Knead well, flatten and place the dough in a lined baking pan. Let sit for another 30 minutes.

Preheat the oven to 180°C (approximately 350°F).

For the filling, peel and finely grate the potatoes. Mix the potatoes, creme fraiche and eggs. Season with salt, pepper and nutmeg. Spread the mixture on the dough. Rinse the scallions and cut into rings. Cut the bacon into thin strips. Rinse the apple, halve, remove the core and cut into fine columns. Spread the scallions, bacon and apple evenly over the potato mixture. Sprinkle with the cheese. Bake for about 45 minutes, until golden brown.

Remove from the oven. Serve warm or cooled.
