Ingredients

For the Pastry
1 ¼ cups flour
7 Tbsps butter
1 egg
1 tsp salt
For the Filling
3 eggs
cup milk
¾ cup cream
salt (to taste)
freshly ground peppers
Nutmeg ([freshly] grated)
0.333 cup Gruyere (grated)
1 small Leek (washed, trimmed and diced)
1 ½ cups smoked, cooked Bacon (diced)

Preparation steps

In a mixing bowl, combine flour, butter, egg and salt together. Knead dough until smooth. Wrap in plastic wrap and refrigerate for 30 minutes.

Preheat oven to 400 degrees F.

Roll the pastry out very thinly between 2 sheets of plastic wrap. Line the bottom and sides (to a height of about 3/4 inch) of a 10" spring form pan.

Beat the eggs. In a large bowl, combine the eggs, milk, cream, salt, pepper, nutmeg, cheese, leek and bacon and pour into the pastry shell.
5.
Bake in the oven for 40 to 45 minutes, or until the eggs have set and the top is golden brown. Let cool for 10 minutes. Serve warm or cold.
