If you don't have apples available, pears are a good substitute.

- 2 Fennel bulb
- 2 Apple
- 2 Lettuce
- 1 baby Radicchio
- 4 Tbsps olive oil
- 2 Tbsps lemon juice
- salt
- freshly ground peppers
- 2 Tbsps Dill
- 7 ozs Gruyere

Preparation steps
1.
Cut pomegranate in half and carefully remove seeds (caution: risk of splashing). Trim fennel, rinse, trims as needed, cut in half, remove hard stalk and cut into thin strips. Rinse apples, cut into quarters, remove core and cut into thin slices.

Rinse lettuce hearts and radicchio, trim and cut leaves into thin strips. Mix oil in a bowl with lemon juice and season with salt and pepper. Mix all salad ingredients in a large bowl, add dill and vinaigrette and mix. Arrange on plates and garnish with the Tête de Moine.
