400 grams yellow onion
600 grams sour Apple (such as Boskop)
4 Tbsps lemon juice
50 grams sugar
50 milliliters Fruit Vinegar
1 red chili pepper
1 tsp peppercorns
4 Star anise
1 Tbsp Turmeric
1 tsp salt

Preparation steps

Peel onions, cut into quarters lengthwise and cut into strips. Rinse apples, peel and cut into small pieces. Add apples and onions to a pot and mix with the lemon juice, sugar and vinegar. Add chile pepper, peppercorns and star anise to a spice bag or a large tea bag and seal. Add to apple-onion mixture. Add the turmeric and salt. Bring to a boil while stirring constantly. Cook uncovered, stirring regularly, about 25 minutes.

Remove spice bag. Pour into hot rinsed jars, sealing well and let cool. Store in refrigerator. To serve, pour into bowls. Tip: To preserve the chutney for longer, you will need to process the jars according to manufacturer's instructions, or visit http://nchfp.uga.edu/.
