125 grams Pastry flour
1 generous pinch Baking powder
2 Tbsps slivered almonds
125 milliliters milk
4 egg yolks
2 egg whites
1 pinch salt
1 pinch cinnamon
2 Apple
1 Tbsp butter
powdered sugar (for dusting)
For the sauce
250 grams mixed Berry (frozen or fresh)
2 Tbsps sugar
50 milliliters Currant juice

Preparation steps

For the sauce: caramelize sugar in a saucepan, add juice and berries. Simmer for about 10 minutes or until sauce thickens. Strain through a sieve and let cool.

Preheat the oven to 180 ° C preheat.

For the cake: place flour in a bowl, add baking soda, milk, cinnamon and egg yolks, mix well. Beat egg whites with 1 pinch of salt until stiff and fold into batter, add almonds. Rinse and dry apples, quarter and core, cut into wedges.

Melt butter in an ovenproof pan and pour batter into it. Cook for about 1 minute and continue cooking in preheated oven at 180°C (approximately 350°F) for about 10 minutes or until golden brown. Sprinkle with powdered sugar and serve with berry sauce.
