- 1 cup butter (softened)
- 1 cup sugar
- 1 tsp pure vanilla extract
- 1 pinch salt
- 4 eggs
- 2 ¼ cups flour
- 2 tsps Baking powder
- 1 ¾ cups Almond flour
- butter (for baking sheet)
- For Topping
- 2 ¼ tart Apple (rinsed; peeled and sliced)
- 3 cups mixed Berry (raspberries, blueberries, currants, etc. )
- For Pastry Cream
- ½ cup almond paste
- 1 ⅔ cups cream
- 3 eggs
- 2 Tbsps vanilla Custard powder
- ½ cup sliced almonds
- powdered sugar (for dusting)

Preparation steps

Preheat oven to 375ºF / 190ºC. Coat a jelly roll pan with cooking spray or butter.

Beat butter until light and fluffy, stir in sugar, vanilla, and salt. Add the eggs one at a time, beating between additions. Sift the flour and baking powder together, add the ground almonds. Mix dry ingredients with the butter mixture. Spread the dough out evenly onto prepared pan.

Spread the apple slices over the dough. Bake in preheated for about 25 to 30 minutes.

Meanwhile, pick over the berries, wash, clean and drain.

Mix the almond paste with the cream, then stir in eggs and pudding mix.

Remove the cake from the oven and spread the berries over the apples. Pour pastry cream over the top and sprinkle with flaked almonds. Bake for an additional 20 minutes, or until golden. Check for doneness. Allow to cool, and sprinkle with powdered sugar. Cut and serve.
