- 400 grams white Daikon radish
- 3 ripe Apple
- 200 grams Snow peas
- salt
- 3 Tomatoes
- 1 Endive
- 100 milliliters sunflower oil
- 100 milliliters apple cider vinegar
- 100 milliliters Apple juice
- freshly ground peppers
- sugar
- 150 grams mixed Lettuce (such as Lollo Rosso, Lollo Bianco, oak leaf lettuce)

Preparation steps
1.
Peel and thinly slice the radish. Rinse and halve the apples. Remove the core and cut into pieces. Blanch the tomatoes in boiling water, then remove. Peel the tomatoes, remove the seeds, and cut into eighths.

Trim the peas, then julienne and blanch in boiling salted water. Rinse and drain well. Mix the radish, apples, tomatoes, and peas. For the dressing, mix the sunflower oil, apple cider vinegar, and apple juice. Season to taste with salt, pepper, and sugar.
3.
Mix the dressing into the radish mixture. Place the lettuce on plates, and top with the dressed radish mixture then serve immediately.
