800 grams small, waxy potatoes

200 grams Snow peas
1 handful Arugula
4 scallions
4 Tbsps white balsamic vinegar
1 tsp spicy Mustard
80 milliliters Vegetable broth

Preparation steps

1.

Rinse potatoes and cook in salted water for about 20 minutes. Cool and halve lengthwise. Heat 1 tablespoon of oil in a pan and saute potatoes for about 5 minutes or until golden brown. 

2.

Rinse snow peas and blanch in salted water for about 2 minutes. Rinse with cold water, drain and halve lengthwise. Rinse and spin dry arugula and scallions. Cut scallions diagonally into rings.Tear arugula into smaller pieces if desired.

3.

Combine vinegar with mustard, broth and remaining oil. Season with salt and pepper.

4.

Combine all prepared salad ingredients and toss with the dressing, Cool slightly and serve.
