- 3 ⅓ cups Spelt flour
- ½ tsp salt
- 1 tsp active dry yeast
- 1 tsp sugar
- 1 ⅓ cups warm water
- 1 Tbsp Hazelnut oil (or sunflower oil)
- ¾ cup chopped Hazelnuts
- 1 ½ Tbsps rolled oats

Preparation steps
1.
Grease a 1kg|2lb loaf tin.
2.
Mix together the flour, salt, yeast and sugar in a mixing bowl. Add the water and mix lightly into the flour.
3.
Add the oil and hazelnuts and knead well until smooth and pliable.
4.
Put the dough into a lightly oiled bowl and cover with a damp tea towel or lightly oiled cling film. Leave to rise in a warm place for about 1 hour, until doubled in size.
5.
Turn the dough out onto a floured surface and knead firmly for 5 minutes.

Shape the dough and put into the tin. Cover with a damp tea towel or lightly oiled cling film

and leave in a warm place for about 25 minutes until risen.
8.
Heat the oven to 220°C (200° fan) 425°F gas 7.
9.
Brush the top with a little water and sprinkle with the rolled oats. Bake for 35-40 minutes until golden and cooked through. Place on a wire rack to cool.
