- 1 cup quinoa flour
- ½ tsp gluten-free Baking powder
- 1 pinch salt
- 5 Tbsps melted Coconut oil
- 2 eggs
- ¼ cup sugar
- 1 tsp Almond extract
- ½ cup sliced almonds

Preparation steps
1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line a large baking tray with non-stick baking paper.
2.
Mix together the quinoa flour, baking powder and salt in a mixing bowl.
3.
Whisk together the eggs, coconut oil, sugar and almond extract.
4.
Add the wet ingredients to the dry and mix until a dough begins to form.
5.
Drop small spoonfuls of the dough, apart, onto the baking tray and press flaked alomds into each.
6.
Bake for 10-12 minutes until starting to brown around the edges. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely. The biscuits will firm up as they cool.
