8 whole Anchovy fillet (ready to cook)
½ Radicchio
½ lemon (juice)
½ tsp Sea salt
2 Plum tomato
freshly ground peppers
2 Tbsps olive oil

Preparation steps

1.

Rinse anchovy fillets and pat dry. Place fillets, skin-side down, in a shallow dish. Drizzle with lemon juice and sprinkle with salt. Let marinate about 10 minutes. Then remove from dish, sprinkle with pepper and drizzle with 1 tablespoon olive oil.

Rinse radicchio and cut into very thin strips. Lay radicchio strips crosswise on anchovy fillets and roll up.

3.

Rinse tomatoes, cut out core if desired, and cut lengthwise into slices. Place tomatoes on plates, drizzle with remaining olive oil and season with salt and pepper. Top with anchovy rolls.
