150 grams butter
250 grams powdered sugar
135 grams ground almonds
60 grams Pastry flour
1 Orange
5 egg whites
butter (for the molds)\
candied Orange peel

Preparation steps

1.

Preheat the oven to 230°C (approximately 450°F). Grease financier molds with butter. 

2.

Cook butter over medium heat until it is foamy and lightly browned. Let butter cool to room temperature. 

3.

Whisk egg whites and set aside. In a large mixing bowl, Combine sieved icing sugar, almonds, sieved flour and grated orange peel. Add butter to egg white and carefully fold mixture into dry ingredients. 

4.

Half-fill each mold with batter, topping each one with a piece of candied orange. Bake about 5 minutes, then reduce heat to 200°C (approximately 400°F). Turn off oven and leave cake inside for another 5 minutes.

5.

Allow cookies to cool slightly and remove from the molds when they are still warm. Garnish with candied orange peel and serve.
